Savor the Season: Bulla Gastrobar Unveils a Spanish-Inspired Fall Menu

Autumn has arrived at Bulla Gastrobar, bringing all the senses alive with rustic plates bursting of golden fall flavors and plenty of Spanish gems. Channeling the energy of Spain’s vibrant gastrobars, this lively Coral Gables favorite is perfect for gatherings: a bustling atmosphere, packed bar and soft lighting surrounded in wood walls. 


Felix Plasencia, Chef and Culinary Director of Centurion Restaurant Group, brings authentic flair to every single dish, making Bulla Gastrobar a true taste of Spain. The flavorful menu is next level: think bold tapas, fresh ingredients, curated wine list, and craft cocktails. All the beloved Spanish classics make an appearance: pulpo a la gallega, montaditos, tortilla española, gambas al ajillo, pintxos, paellas and much more.


Bulla Gastrobar’s fall feast of seasonal taste sensations is unmatched. Chef Plasencia explains the dishes were inspired by the warmth and comfort of the season, combined with classic Spanish techniques. 


“We wanted to create plates that feel rich, balanced, and soulful while staying true to the flavors and traditions of Spanish cuisine,” shares Chef Felix Plasencia. “Fall flavors blend naturally with Spanish-inspired cooking because both emphasize warmth, depth, and earthiness. Seasonal ingredients like roasted vegetables, spices, and nuts enhance the richness of Spanish techniques, creating dishes that feel both seasonal and authentically Spanish.” 


First, the indulgent autumn-inspired appetizers that will leave you craving for more.


A silky cream of butternut squash soup arrives - slightly sweet and oh-so fragrant - lifted by cracked pepper and smoky Spanish paprika. Toasted cheese crostinis top the dish, inviting unapologetic, dip-and-savor comfort.


The textured clams with chorizo, swimming in a white wine meets chicken stock broth, is brightened with diced tomatoes and basil. It is a richness of garlicky and savory harmony - the kind of indulgent dish a sliced toasted baguette was made for.


Pair these dishes with medium-bodied Spanish wines. The Gran Coronas Reserva Cabernet Sauvignon, with a blend of Tempranillo, bursts with expressions of black fruits, spice, vanilla and licorice. The Torres Celeste Crianza Ribera del Duero presents velvety notes of blackberry jam, coffee, spiced oak, strawberries and cherries.


The harvest-inspired culinary happiness continues with two seasonal entrees.


A braised brisket caldoso, served in a warm cazuela, unfolds with Valencia-style rice folded with red sofrito, sweet peas, piquillo confit and crisp chickpeas. Topped with rosemary, this is a hearty and aromatic masterpiece - a decadent, share-worthy bowl easily generous enough for two.


Branzino con papas arrugadas plates an oven-roasted filet draped in a delicious lemon-caper sauce, alongside traditional Canarian-style salted potatoes and a fiery mojo picón on the side. It’s soulful, coastal flavor with just the right snap of heat.


Always save room for dessert, and Bulla Gastrobar doesn’t disappoint. 


Pumpkin crema catalana gives the traditional classic a fall glow, layering a silky pumpkin custard under a crackly caramelized top and fresh berries. It’s a clever spin on a beloved Spain-inspired dessert.


For a dessert-like edge, try the fall cocktail - a smooth banana Old Fashioned marries Maker’s Mark bourbon with banana syrup and chocolate bitters. A crisp, refreshing non-alcoholic cocktail also pops up on the menu - a pear fizz combining fresh pear purée, zesty ginger beer, and a hint of cinnamon.
